Luxury cruise and expedition line Seabourn announced a new fine dining experience, Solis, inspired by Mediterranean cuisine, which will debut onboard the Seabourn Quest in January 2024.
The new restaurant venue will also be rolled out across the Seabourn Encore, Seabourn Ovation and Seabourn Sojourn by spring, 2024.
The fine dining experience was created in a collaboration with Master Chef and Culinary Partner Chef Anton Egger and Senior Corporate Chef Franck Salein.
Dishes will offer a variety of Mediterranean flavors, from the French Riviera to Greece. Dishes include Piquillos de la Mama, Basque piquillo peppers with fresh Murcia goat cheese served on a crostini; Branzino, a whole sea bass baked in a seat salt and thyme crust and served with artichokes and tomatoes; and spiced lamb shank, with chargrilled smoked eggplant with tahini, pomegranate, pine nuts and labneh. Vegan and vegetarian dishes will also be offered.
